Ground buckwheat is hard to form into long strips, so it is first kneaded with lukewarm water and rolled out with a rolling pin. This sheet is then folded and cut into thin noodles. Meanwhile, the chicken is boiled down to create a rich broth, and the flesh is shredded and used as a garnish.
