As for its name, the most likely among the various theories is that this cut originates from the Korean diasporic community in the city of Los Angeles, United States. It is simpler to prepare and eat than standard grilled galbi, so it is often eaten on Seollal (Lunar New Year's Day) or Chuseok (Korean Thanksgiving Day). An important step in the preparation of grilled marinated galbi is soaking the meat, as the process of butchering, which involves cutting the ribs perpendicularly, results in the meat being dusted with bone fragments. Once the meat is washed cleanly, it is marinated in pureed pear and onions, soy sauce, sugar, garlic, and cooking wine overnight before grilling. The pear and onions used in the marinade helps to soften the meat, while the sweet-and-salty soy sauce and sugar component bring out the best of the beef.
