The spicy mudskipper stew is the local delicacy of Suncheon, Jeollanam-do. Mudskipper is boiled, then soybean paste, ground red chili peppers, zucchini, and green onions are added and the pot is boiled again. Then minced garlic and ginger are added and boiled. Mudskipper lives in mudflat holes and the fish is mainly made into a stew in summer, rather than being grilled. The stew is very thick and you can add some prickly ash powder to remove mudskipper's uniqe fishy smell.
