This traditional sweets is made by mixing rice powder and powdered soybean into a dough, steamed, then when it dries is grilled. Afterward, it is glazed with malt syrup and rolled into a puffed rice powder. Malt syrup-glazed soybean chips are traditional sweets from Sunchang, Jeonbuk State. Unlike other similar sweets, malt syrup-glazed soybean chips are not deep-fried but grilled, giving them a cleaner flavor. A dough is formed from powdered soybeans, sweet rice powder, and water, which is then rolled out into a thin sheet, sliced into diamond-shaped chips, and left to dry. The chips are grilled, glazed with starch or malt syrup, then rolled in a puffed rice powder. This dish is known as “Kongkkaejal” in Jeonbuk State and “Kongyugwa” in Jeollanam-do. Each bite comes with a chewy and crispy texture, filled with a deeply rich flavor from the powdered soybeans.
