“Gangjeong” refers to a type of confectionery made with rice powder. Sweet steamed rice puffs is made with cold steamed rice. The rice must not be starchy because it must be dried well to be deep-fried. After being laid out as a thin layer on a plate dried under the sun, it is then deep-fried in oil and drained. Malt syrup, sugar, and water are added to a pan and simmered down to create a sauce. Deep-fried rice puffs are mixed with the sauce, and sunflower seeds and pumpkin seeds are added. Once the rice puffs are coated with the sauce, the puffs are laid out onto a tray, left to cool, then shaped into bite-sized balls. The resulting rice puffs are sweet and rich from the nuts used in the process.
