This traditional beverage is a sweet punch made from ginger, cinnamon, sugar, and dried persimmon. “Sujeonggwa,” or cinnamon punch, was a special dessert prepared for the Lunar New Year’s Day, along with sweet rice punch. Ginger is peeled and finely chopped, then slowly brought to a simmer in water. The water is drained through a fine sieve. Washed cinnamon sticks and whole peppercorns are added until the water is colored red, followed by sieving and bringing to a boil with sugar. Finally, dried persimmon is added until softened, plated, and garnished with pine nuts. The combination of the ginger’s spicy notes, the gentle fragrance of cinnamon, and sweet dried persimmon create a refreshing and fresh harmony.
