Jecheon, Chungcheongbuk-do, is famous for medicinal herbs. There is a large herb medicine market in the area, and a festival dedicated to medicine and health is held every year. Thus, many restaurants in the region prepare dishes using medicinal herbs as ingredients. This set menu uses medicinal herbs to prepare the table, so it features a massive amount of vegetables on par with Korean table d’hote of seasoned wild vegetables. The side dish uses homemade soybean paste and soy sauce made with Korean soybeans and fermented for more than two years. They are not only delicious but also good for one’s health as well. Wild vegetables and herbs like siler, giant angelica, Siberian ginseng, dandelion, deodeok, bellflower root, wild mulberry leaf, and Fischer’s ragwort are made into pickles, while fermented sauces made of plum, mulberry, water parsley, arrowroot, dandelion, and thistle are used for flavoring. Other dishes on the table include salads, white kimchi, deep-fried yam, and stir-fried mushrooms and vegetables, along with soybean paste jjigae, grilled red chili paste marinated pork, deep-fried lotus root and vegetables, and a suite of salads and pickled vegetables.
