This rice cake is made with sweet rice powder, black soybean braised in sugar, and dried pumpkins. It is traditionally eaten on Jeongwol Daeboreum, the first full moon of the lunar calendar. “Hobak goji,” also called “hobak ogari,” refers to thinly sliced and dried pumpkins. First, sweet rice is soaked overnight and then ground into a fine powder. Second, black soybean is drenched and braised in dark sugar. Third, the dried pumpkin is soaked and mixed with dark sugar. Fourth, hemp cheesecloth is spread over a steamer, and the black soybeans are placed at the bottom. Fifth, the meal is topped with sweet rice powder, chestnut, jujube, and dried pumpkin in layers. Sixth and last, it is steamed, basted with honey, and left to cool and sliced as needed. Dried pumpkin is chewy and sweet, while black soybean offers a rich flavor. Taken together, these rice cakes are a perfect wintertime snack.
