Green Chili Pepper Water Kimchi is made by scraping out the seeds and placenta inside the green chili peppers and then filling them with julienned radish and carrots tossed with salted seafood sauce. The kimchi uses green chili pepper, or “putgochu” in Korean, which means unripened pepper. Green chili pepper is eaten raw or deep-fried or used as an ingredient in braised dishes, pickled dishes, pancakes, or japchae. To make the kimchi, the green chili peppers are first scraped out. Second, the filling is replaced with julienned radish and carrot, tossed in salted shrimp, salted anchovy sauce, and sugar. Third, once the chili peppers are filled, kimchi paste is prepared with glutinous rice paste, salted seafood sauce, and salt. After marinating the chili peppers with the kimchi paste, let the kimchi ripen for a day or two, then dig in. This kimchi helps to whet one’s appetite with its refreshing and spicy kick. Chili pepper is rich in vitamins and capsaicin, which is effective for weight loss.
