Baesuk is a refined drink traditionally enjoyed in the royal palace. Originally, it was drunk cold, and thus was known under the name “winter hwachae (punch).” When drunk warm, baesuk also warms the body, so it makes for a great winter beverage. It is also known as baesujeonggwa (pear cinnamon punch), as the recipe replaces the dried persimmons with pear to be added to ginger tea. Based on court records, baesuk is made with five ingredients, namely pear, pine nut, black pepper, ginger, and honey. The pear is first studded with black pepper and boiled in honeyed water with ginger, while pine nut is used as a garnish. The result is a luxurious drink that balances the spicy fragrance of ginger and black pepper on one hand and the sweetness from the pear on the other hand. A similar dish overseas is fruits compote.
