Ordering bean sprout and bulgogi in the restaurant will have the staff bringing out a pan piled high with bean sprouts. Third and last, once the meat is mostly cooked, the heat must be turned off quickly, and residual heat is used for finishing the cooking to maintain the crunch of the bean sprouts.
