This is a malt candy made with steamed glutinous millet, fermented and simmered in malt water with the addition of pheasant meat. It is a specialty of Jeju, where it was valued as a stamina food. Many types of malt candy can be found across Korea, but Jeju is famous for pheasant malt candy and chicken malt candy. The basis for this dish is steamed glutinous millet fermented with malt water. The mixture is brought to a boil, and plucked and gutted pheasant is added. Once the meat is cooked, it is taken out and bones are removed. The meat is shredded and added back to the malt water when the candy is nearly done so that it can mix well. The result is a dessert that resembles other malt candy as it is chewy and highly sweet. Once the candy melts in one’s mouth, one can find kernels of chewy pheasant meat.
