This is a folk dish often eaten in Jeju. The name geutjeot comes from the Jeju expression for abalone intestines, “geut.” It has historically been regarded as a scarce dish. Abalone intestines are tossed with salt, fermented for about 15 days, then mixed with green and red chili peppers and ground sesame seed to taste.
